New Potatoes – My favorite kind of potato, new potatoes are basically immature potatoes with no curing. I dig them up and bring them straight to market. Although they certainly don’t last as long as a regular potato, the lack of curing results in a moister, sweeter potato than what can typically be found. New potatoes are revered for their thin skins that have an unmatched crispness when oven-roasted or sautéed. I am selling these at $4.00 per quart (around 10-12 1-2″ potatoes), 50/50 mix of yellows and reds.
